Still trying to make meatless dinner but cheated just a little bit by adding half of a Spanish chorizo because it is essential to this dish.
Ingredients: 1 lb asparagus, eggs, half of a Spanish chorizo, 2 chopped garlic cloves, 1 each medium size onion, tomato and sweet red bell pepper, salt and pepper to taste, a pinch of pimenton, and extra virgin olive oil for sauteing and sprinkling after baking.
For dessert I made fresh white peaches ice cream.

The food looks yummy, and I am looking at it at 11:17 pm and wondering why I don't have home made coffee-mangosteen ice cream. How about sharing a basic home made ice cream recipe that can be altered with fruits, etc? BTW, there is a vegetarian Mexican chorizo (Melissa's) which could sub for the meat one. Tofurkey also makes an excellent veg Italian sausage.
