Red White Blue Cookie Sandwich

1 cup soft butter
1½ cups powdered sugar
2 egg whites
1 teaspoon vanilla extract
2½ cups all-purpose flour, sifted
½ teaspoon baking powder
¼ teaspoon baking soda
½ teaspoon fine sea salt
red and blue food dye
- Preheat oven to 350°F.
- In a small mixing bowl, whisk together flour, baking powder, baking soda, and salt; set aside.
- In a mixing bowl, beat butter and powdered sugar until light. Add vanilla extract and egg whites and beat until creamy. Slowly add flour mixture while beating on low speed until fully combined.
- Optional: Divide into 2 portions and add food dye. Using a 1-tablespoon ice cream scoop, scoop out dough onto 2 parchment-lined cookie sheets, 2 inches apart [I used a waffle brownie pan]. Bake for 14 minutes. Let cool completely in the sheet pans before filling.

2½ cups vanilla infused powdered sugar
3 tablespoons corn syrup
- Beat ingredients on medium speed until creamy.
