Fathead Pizza

I haven't heard of fathead dough. I read about it a week ago from someone who lost a lot of weight by partial fasting, that is, not eating anything after dinner until lunch the next day. He combined the fasting with low carb diet recommending the fathead pizza dough. I tried it but it was not satisfactory because it came out too pale and soft.

I tried again by baking the dough in a cast iron skillet and it turned out much better. The edges are crispy and the bottom is nicely browned. You won't get the flavor of wheat dough but if you want to reduce your carbohydrate intake, this will definitely satisfy your pizza craving. I recommend a 10-inch Lodge cast iron skillet. It's cheap and still made in the USA.


Fathead Pizza
dough
2 tablespoons cream cheese, cubed
1 cup shredded mozzarella
1 cup fine almond flour
¼ teaspoon fine sea salt
¼ teaspoon garlic powder
¼ teaspoon Italian seasoning
¼ teaspoon finely ground fennel seed
1 egg, lightly beaten
1 tablespoon olive oil or fat drippings

suggested toppings
1 can tomato paste mixed 2 tablespoons with extra virgin olive oil, dash each garlic powder, Italian seasoning, and ground fennel seed
sliced provolone cheese
sauteed sweet onion
chopped grilled green bell pepper
precooked hot Italian sausage
mini pepperoni
2 tablespoons Parmesan cheese
2 tablespoons shredded mozzarella cheese
  • Preheat oven to 450°F.
  • Place mozzarella in a glass bowl. Evenly add cubed cream cheese on top. Microwave on high for 45 seconds; stir with a rubber spatula. Microwave for another 20 minutes on high and stir to mix.
  • Add almond flour, salt, garlic powder, Italian seasoning, fennel seed, and egg. Mix until well combined.
  • Spread oil on the cast iron skillet.
  • Roll dough evenly into an 11 inch round in between 2 pieces of waxed paper. Remove top paper and invert dough onto the prepared skillet, creating a half inch lip up the sides of the skillet. Bake for 8 to 10 minutes or until golden brown.
  • Spread 3 tablespoons tomato sauce. Top with provolone cheese, onion, green pepper, Italian sausage, and pepperoni. Sprinkle with Parmesan and mozzarella cheeses. Bake for 8 to 10 minutes or until golden brown.
