Kefir Cheese Ranch Dip
2 cups kefir cheese, homemade* or store-bought
2 tablespoons Ranch dressing powder
1 teaspoon sea salt, optional
1 cup grated sharp cheddar cheese, divided
2 tablespoons chopped scallions, divided
½ cup crisp-fried chopped bacon
- In a medium bowl, whisk together kefir cheese and dressing powder until smooth.
- Taste and add salt if needed. Stir in half of cheese and 1 tablespoon scallions.
- Transfer kefir cheese mixture in a 5 x 5 inch glass dish. Smooth top. Sprinkle the rest of the cheese, followed by bacon, and the remaining 1 tablespoon chopped scallions.
- Cover and chill for at least 2 hours for the flavors to meld. Serve with chips and raw vegetables. It's also good with meatballs.
