Oreo Thin Mints

It's that time of the year again when young girls [accompanied by adults] come door to door to deliver preordered cookies. I bought cookies from them probably once many years ago. I think a 9-ounce box of tiny cookies @$4.00 is too expensive, IMHO. I admit I'm a cheapo and I can buy some of their exact same cookies from the grocery store under different names baked and sold by Keebler®. These cookies are no longer "homebaked" by girl scouts for many years now..

I don't know if these cookies are available outside of the USA, but for those who want no-bake thin mints, which I think is their most popular, it's easy to make, even a child, girl or boy, can do it. These are good if you use good quality chocolate and not the super sweet candy melts that taste of wax, or something. If you don't want chocolate cookies, Ritz® crackers would also make good thin mints.

Oreo Thin Mints
Oreo cookies
1 cup semi-sweet chocolate chips
1 tablespoon coconut oil
1 teaspoon pure mint extract
  • Carefully separate cookies. Discard or keep the cream filling if desired. 
  • While stirring with a rubber spatula, melt chocolate with oil in a bowl set over a pan of simmering water. 
  • Remove from pan and stir in mint extract 
  • Dip cookies using a fork and set on a foil-lined flat surface such as the kitchen counter or a cookie sheet. Leave until completely set. Remove from foil and keep in an airtight jar.

oh, i thought they were homebaked (those cookies being sold by the girlscouts)! di na pala, lol. i don't think they sell them around here. :P
