I had kimchi fried rice today...twice...for lunch and dinner too. So simple to make, so delicious!
serves 1
1 tablespoon olive oil
¼ cup thinly sliced onion
¼ cup diced cooked chicken, pork, or ham
1 cup cooked rice
½ tablespoon soy sauce
1 cup coarsely chopped kimchi
½ tablespoon crispy fried scallions, optional
½ tablespoon crispy fried scallions, optional
1 fried egg
- In a small wok, heat half a tablespoon of oil and saute meat until almost crispy; remove to a small container and set aside. Add the rest of oil to the wok and saute onion until soft and translucent. Add rice, soy sauce, and the meat and stir fry for 2 minutes. Stir in chopped kimchi and stir fry for 3 minutes. Stir in crispy fried scaliions, if desired. Transfer into a bowl and top with the fried egg. Enjoy while hot.

I'm not in kimchi but the hubby is. Fast and easy to prepare though.

Wow, I feel like eating this now. But we don't have kimchi at home! :( Do you buy bottled kimchi in SM groceries? What brand would you recommend?

went to the korean grocery to buy kimchi doing this for lunch, will also try it on corned tuna quesadilla ala kris aquino. thank you for posting simple yet delicious recipes i thought food for the gods was hard to do, it was such a breeze also baked the butterscotch bars with dried mango, my american boss liked it. thanks so much. made yema too - alilay
