Chicken Arroz Caldo

Arroz Caldo, translation is rice broth, is the Filipino version of Chinese congee. Arroz caldo is not soupy and the consistency is more like porridge. Er, it IS rice porridge flavored with chicken, garlic, ginger, and Spanish saffron and simmered in broth. It's one of the dishes that best represents the mixture of Filipino heritage combining Spanish, Chinese, and Filipino flavors.

When I make this dish I add the coloring agent called kasubha which is dried safflower. It is sometimes called fake saffron because it resembles saffron although it doesn't taste at all like saffron. In fact, it doesn't taste of anything, but it is great in adding color to food without imparting a distinct or strong flavor.

Chicken Arroz Caldo
1½ pounds chicken pieces
2 tablespoons light olive oil
1 medium onion, sliced
5 garlic cloves, sliced
1 tablespoon sliced fresh ginger
2 tablespoons fish extract
1 cup glutinous or medium grain rice
4 cups low-sodium chicken broth, or more as needed
a big pinch of Spanish saffron
1 teaspoon kasubha, or more for a deeper yellow color
salt and ground white pepper to taste
chopped scallions for garnish
calamansi or lemon juice
  • In a large pot, heat oil and saute chicken pieces until light brown. Add onion, garlic, and ginger and stir fry until onion is soft and translucent. Add fish extract and rice and stir fry for 2 minutes.
  • Add the broth, saffron, and kasubha. Bring to a boil, cover, and let simmer for 20 to 30 minutes. After 15 minutes, check if there is enough liquid and add accordingly. Taste and adjust seasoning.
  • Serve with chopped scallions (I have not used scallions recently because they all come from Mexico and I'm avoiding uncooked or difficult to clean stuff from that country; I topped the porridge with fried shallots and garlic) and calamansi or lemon juice.

It's left-over this week at Lasang Pinoy, Sundays hosted by SPICES. There's plenty of tiny containers in my refrigerator to choose from but nothing beats "aged" adobo which tastes better after a few weeks in the refrigerator. I toasted the chicken flakes on a hot skillet until crispy and crusty and layered them with cream cheese, sliced tomatoes, and an egg omelet on dark rye bread. Weird combination, I know, but the sandwich is yummy. I washed it down with iced banaba tea.

I love watching cheesy Nicholas Cage movies on DVD. In Bangkok Dangerous Nicholas has a really weird dyed black hair that looks greasy and stringy (almost mangy), and at the beginning of the movie I thought his receding hairline has been painted on with black make-up or tar which makes the movie all the more cheesy. He plays an assassin named Joe who, in his supposed to be last assignment before retiring, grows a heart when he falls for a pretty deaf-mute Thai girl. He does not want to finish the fourth assassination job which results in an all out war with his employer. I know, lame premise but whatever...the movie is entertaining. It has enough action and a little gore (such as a severed arm) although pretty tame IMO. The directors, the Pang brothers, contrived to show what every tourist (including myself) must experience when in Bangkok: heavy traffic, floating market, giant golden Buddha, tuk-tuk, jewelry shops, and most importantly, spicy food. When Joe went on a date with the deaf-mute girl he starts sweating profusely while eating spicy Thai food, and was encouraged by the girl to take some Tom Yam Gung which is extremely spicy. She offered some basil or mint leaves to cool him off but then she kept giggling (silently) at his expense. The movie is full of cliches and unnecessary subplots but I really enjoyed it. Highly Recommended (to those who have low expectations and just want to be entertained).

After watching the movie I got hungry for Thai food. Tom Yam Gung is one of the easiest dishes to make and since I had the ingredients except for straw mushrooms which I substituted with fresh oyster mushrooms, I prepared it and in less than 20 minutes I was slurping spicy and sour prawn soup.

Tom Yam Gung
a little more than ½ pound medium prawns, shelled with tails on
2 stalks lemon grass, cut into 2 inch pieces and bruised
3 birds eye chili, sliced
6 cups water
1 small piece fresh galangal, sliced
2 tablespoons fish extract
½ cup lemon juice
1 cup straw mushrooms
coriander leaves, for garnish
  • Boil the water in a saucepan, add lemongrass and galangal, cover and simmer for 10 minutes. Add the prawns, chili, mushrooms, and the fish extract and simmer for 3 minutes. Add the lemon juice, taste, and add more fish sauce if needed. Transfer into a serving bowl and garnish with coriander. Note: the lemongrass and galangal are not meant to be eaten but to flavor the soup.
This simple sweetish spicy savory Thai chicken dish is one of our favorites, we never get tired of it. It is strange that we have never seen this dish in any Thai restaurants in my area or maybe I don't now its name in Thai.

Minced Chicken With Basil


1 tablespoon vegetable oil
3 cloves garlic, chopped
1 pound minced chicken
1½ tablespoons dark soy sauce
3 tablespoons fish extract
1 tablespoon dark brown sugar
80 Thai basil leaves
6 birds eye chili, sliced
  • Heat the oil in a wok or saucepan and fry the garlic for 1 minute. Add the chicken and stir fry for 4 minutes. Add the soy sauce, fish extract, and sugar and mix thoroughly. Add the basil leaves and the chili. Stir fry for 5 minutes. Transfer into a serving dish.

Chicken Adobo Tostado

After reading about THE ADOBO BOOK over at Marvin's, I was convinced and finally got my copy. I was hesitant in buying this book when I first read it in Market Manila's blog a few years back because of its author. I purchased two of Reynaldo Alejandro's cookbooks, I kept one (taking up much needed space in my cookbook cabinet) and the better of the two I gave to a friend who does not cook very often. I checked amazon.com and some insane person is selling it for a ridiculous price of $324.95, and another for the more reasonable but still waaay too expensive $34.95. This book costs $5.00 in the Philippines and if you have relatives or friends coming to visit, you can ask them to buy it for you. It is thin and small and won't occupy much space in their luggage. The recipes are from some well-known Filipinos (at least to me they are), a few from the author himself, and some from the relatives of the other author who belongs to a family of restaurant owners in the Philippines. After reading and cooking a few recipes, I can say it is very good because it has some recipes that my own mother had prepared which rarely get mentioned in any other Filipino cookbooks. I give this cookbook a two-thumbs up regardless of the absence of photographs.

One of the recipes that I cooked is Maverick's Adobo Tostado because it is very similar to one of the adobo recipes I make, with wine vinegar or sherry and then deep fried. The recipe is from Marivic Rufino Buenaventura whom I met and worked with briefly at the Philippine Airlines ticketing office over 30 years ago. I was in that office for only two weeks when she was hired answering telephone inquiries. I did not know who she was until she approached me and asked if I have heard rumors about her (I had not at the time). She confided in me that she felt the women in the office were gossiping about her, talking amongst themselves in front of her in their dialect (Cebuano) followed by giggling. I later learned what the rumors were about which followed her wherever she was assigned that went round and round the 2 years she worked at the airline. I did not know her that well because she left after 2 weeks but I do believe that she was and still is a very nice soft-spoken gracious person, and her adobo recipe is delicious. I'm not sure how she got the nickname maverick, though.

I made chicken adobo adapted from her recipe adding ¼ cup of cider vinegar because her recipe has only a cup of wine vinegar and I prefer my adobo a little bit more sour. It also does not specify the cooking time, you have to eyeball and cook it by instinct, how much sauce you want, taste it and adjust accordingly.

Maverick's Adobo Tostado
1 cup olive oil
3 heads garlic, crushed and finely minced
1 kilo pork belly, cubed
1 kilo chicken parts
1 cup wine vinegar or leftover white wine
¼ cup Kikkoman soy sauce
1 - 2 bay leaves
rock salt, to taste
1 tablespoon freshly ground peppercorn
corn oil for deep frying
a bit of Tabasco
  • Fry 2 heads of garlic in olive oil until brown. Set aside garlic.
  • Sauté pork, add chicken. Continue to cook till brown.
  • Add wine vinegar, soy sauce, bay leaves, wine, salt, peppercorn, and the fried garlic. Simmer for hours on low fire. When cooked, drain chicken and pork. Keep sauce separate.
  • Heat oil, add the remaining garlic and deep fry chicken and pork cubes until crispy. Drain and serve in a large platter. Serve sauce in a separate bowl.
Note: the Tabasco does not appear in the recipe. I guess you can sprinkle the cooked adobo before or after frying or maybe add a few drops to the sauce.

It's been chilly the past 3 weeks which means time to enjoy plenty of delicious soup for dinner. I have made Matzoh Ball, Kabocha Squash, Chicken Tinola, and Hot & Sour, the recipes I am sharing except for the Matzoh Balls because I prepared it straight out of a box. The soup is really good, we all loved it. I bought some matzoh crackers and will make the balls and soup from scratch and will write about it soon.

Kabocha Squash Soup
1 tablespoon butter
1 garlic clove, minced
1 medium shallot, minced
1 teaspoon minced fresh ginger
3 cups peeled and cubed kabocha
2 to 3 cups water
½ teaspoon salt
grated orange zest, optional
crème fraîche* or sour cream
  • In a medium saucepan, heat the butter over medium heat. Add garlic, shallot, and ginger. Stir fry until shallot has softened, making sure the mixture does not get brown. Add the kabocha, water, salt, and orange zest, if using. Increase the heat to medium high and let come to a boil. Cover the pan, decrease heat to medium and simmer until the squash is tender, about 20 minutes.
  • Turn the heat off. Puree the soup in the pan using a stick blender. Or transfer into a blender and puree.
  • Serve with a dollop of crème fraîche.
*To make crème fraîche at home: in a clean jar, combine 2 T buttermilk and 1 cup heavy cream, both at room temperature, cover with plastic wrap and leave on the kitchen counter for 24 hours or until thick. Refrigerate immediately. Will keep for 2 weeks in the refrigerator.

Hot And Sour Soup




This Chinese soup is one of our all-time favorites. It takes very little time to prepare and enjoy. The soup usually has a cup of julienned lean pork which I omitted.

2 cups chicken stock
2 tablespoons soy sauce
1 cup sliced shiitake or baby portabella
½ cup julienned bamboo shoots
¼ teaspoon dried hot pepper flakes
2 tablespoons white wine vinegar
2 tablespoons cornstarch mixed with ¼ C water
1 cup diced firm silken tofu
1 large egg, beaten
sesame seed oil
snipped scallions
  • In a medium saucepan, heat the stock, soy sauce, mushrooms, and bamboo shoots. Bring to a boil, cover, and simmer for 10 minutes. Add the vinegar, cornstarch mixture, tofu, and pepper flakes. Boil gently while stirring until the soup becomes clear (cornstarch is completely cooked). Turn the heat off and stir in the beaten egg and a few drops of sesame seed oil. Transfer into a soup tureen.
  • To serve: Sprinkle individual bowls with scallion and sesame oil.
Chicken Tinola



I don't have the exact measurements for this Filipino chicken soup and did not follow any recipes. I made it from what I remember it should have and taste like. My mother's tinola had young capsicum leaves added for color and extra nutrition. I used green beans because that's what I had available when I prepared the soup.

1 whole chicken, cut into serving pieces
4 cups water
2 tablespoons peeled and sliced fresh ginger
6 scallions, cut into 2-inch pieces
2 tablespoon fish extract
1 teaspoon salt
½ teaspoon whole black peppercorn
1 small green papaya, peeled and cubed
green leafy vegetable such as baby bokchoy or horseradish tree leaves
  • In a large pot, heat water and chicken and let come to a boil. Skim off the foam and discard, then add ginger, scallions, fish extract, salt, and whole peppercorns. Cover pot and let boil over medium heat for 40 minutes. Add the green papaya, boil for another 5 minutes. Add the green leaf vegetable and cook for another 2 minutes. Taste and adjust seasoning.

Chicken Tandoori Sandwich

It seems all I cook these days is chicken. I actually cook other stuff but get lazy writing and posting about them. A week ago I smoked a 4-pound ham (which btw is waaay better than store bought) that I will feature in a future breakfast post. Anyways, last Sunday I read a tandoori chicken slider sandwich featured in a magazine restaurant review and I drool each time I see the photos of the sandwiches. I love tandoori-style chicken and the sandwich version looks really good. And it is so good, at least the one I made.:=)

For the tandoori I diced the chicken meat instead of ground and used aluminum rings for making crumpets to keep the meat patties from crumbling. I wanted to charcoal grill the patties but the weather was threatening (to rain) yesterday. Frying in very hot skillet worked just fine. I served the sandwiches with tzatziki broccoli slaw, shaved mini cucumber, and lots of tomatoes. Yummy! My daughter slathered homemade Greek yogurt cheese on the bottom bun and added tzatziki on top of the chicken for a triple dose of yogurt. Yummier!

Algerian Chicken Tagine With Apricots And Spiced Pine Nuts

This North African chicken tagine or tajin recipe by Farid Zadi is adapted from the February 2008 issue of Gourmet magazine. According to the cookbook FROM THE LANDS OF FIGS AND OLIVES, the North African tajin differs slightly from the tajin of the Middle East. In North Africa they use more herbs and spices. I love this recipe for its sweetish sauce, the subtle spices that blend so well together, and the crunch of the spiced pine nuts.

Chicken Tagine With Apricots And Pine Nuts
tagine
1 whole chicken, about 3½ pounds
2 tablespoons extra virgin olive oil
3 large shallots, finely chopped
1 tablespoon unsalted butter
2 garlic cloves, minced
1 tablespoon grated peeled ginger
¼ teaspoon turmeric
¼ teaspoon sweet paprika
Pinch of saffron (optional)
1 cup water
2 tablespoons bitter-orange marmalade
1 two-inch cinnamon stick
1 thyme sprig
2 cilantro sprigs
6 dried apricots. chopped
1 tablespoon finely chopped cilantro

spiced pine nuts
1 tablespoon olive oil
¼ cup pine nuts
¼ teaspoon turmeric
¼ teaspoon sweet paprika
pinch of cayenne (optional)

lemon wedges
  • Tagine: Cut out chicken into serving pieces. Pat chicken pieces dry and sprinkle with 1 tsp salt. Heat 1 tablespoon oil in a skillet over medium heat and brown chicken pieces. In a 6-quart pot, saute shallots in the butter and remaining oil, stirring frequently until soft, about 8 minutes. Add garlic, ginger, turmeric, and paprika, and stir fry for 3 minutes. Add the browned chicken, saffron, and ½ tsp salt coating chicken well. Add water and bring to a boil. Cover and simmer for 30 minutes. Turn chicken and add orange preserves, cinnamon stick, thyme cilantro, and apricots. Simmer, covered, for 10 minutes. Uncover and simmer until chicken is very tender, about 15 minutes more.
  • Prepare pine nuts while chicken cooks: Heat oil in a small skillet over medium heat then stir in pine nuts. turmeric, paprika, and cayenne if using, stirring frequently, until nuts are lightly browned, about 1 to 2 minutes.
  • To serve: Transfer chicken to a platter, keep warm. Boil the sauce and reduce to 1 cup. Discard herb sprigs and cinnamon stick. Stir in chopped cilantro and spoon sauce over the chicken. Sprinkle with nuts.

Mark Bittman's Chicken Adobo

A reader emailed me last week asking for Mark Bittman's Chicken Adobo recipe. I didn't know he has one and thought it might be the Mexican adobo version. I got curious and borrowed from the library his 1998 cookbook HOW TO COOK EVERYTHING and there it is on page 377: Filipino Chicken Adobo. He writes: "The Philippine classic has been called the best chicken dish in the world by a number of friends of mine." He uses the basic Filipino adobo ingredients and finishes the dish in the grill (or broiler) after boiling in the vinegar mixture for 30 minutes. The grilled flavor and the crispy skin and meat make the chicken adobo really special. I altered his recipe a little bit by using only half a cup of soy sauce and adding 1½ tsp of sea salt and half a cup more of water. I also used the dark (cane sugar) vinegar from the Philippine Ilocos province which gives the dish a hint of sweetness and a fruity flavor. I will definitely add this recipe to my growing Adobo recipe collection for my ADOBO COOKBOOK. The dish also gave me an idea to adobo-marinate other meats such as baby back ribs or thin sliced pork belly, then grill directly without boiling them first.

Mark Bittman's Chicken Adobo
1 cup soy sauce
½ cup white or rice vinegar
1 cup water
1 tablespoon chopped garlic
2 bay leaves
½ teaspoon freshly ground black pepper
1 whole (3 - 4 pounds) chicken, cut up, trimmed of excess fat, then rinsed and patted dry with paper towels, or use 2 pounds bone-in thighs
  1. Combine the first six ingredients in a covered pot large enough to hold the chicken in one layer. Bring to a boil over high heat. Add the chicken pieces, reduce the heat to medium-low and cook, covered, for about 30 minutes, turning once or twice. (You may prepare the chicken in advance up to this point; refrigerate the chicken, in the liquid, for up to a day before proceeding.)
  2. Start a charcoal or wood fire or preheat a gas grill or broiler. The fire need not be too hot, but place the rack just 3 or 4 inches from the heat source.
  3. Remove the chicken and dry it gently with paper towels. (My note: Remove excess fat before boiling sauce.) Boil the sauce over high heat until it is reduced to about 1 cup; discard bay leaves and keep the sauce warm. Meanwhile, grill or broil the chicken until brown and crisp, about 5 minutes per side. Serve the chicken with the sauce and white rice.
The aroma of very hot rice and chicken on the banana leaf I lined the serving platter and my plate with evoked memories of my elementary and high school days. The very few times I bought baon (packed lunch) were on school field trips. My mom used to put hot rice in the middle of several layers of large banana leaves then place the hot meat, usually chicken and pork adobo with plenty of sauce, on top of the rice soaking the rice with the sauce, then fold the corners together, tuck them in to make a neat leak-proof bundle. Believe me when you open the package and get a whiff of the fragrant banana leaves, rice, and adobo combination you'll want to dig right in even if you're not very hungry. Banana leaves as a food wrapper or container is way better than plastic boxes or aluminum foil, good for the environment too.:-)

Gazpacho, Asparagus Chicken Sandwich, Hummus, And More

The past 4 days I haven't turned on the stove and we have been eating cold food and loving it immensely. Yesterday I made gazpacho, a Spanish cold soup with fresh tomatoes and cucumber. I have plenty of steamed asparagus and bought strips of roasted chicken which I made into pita sandwiches. I also made hummus and served it with wholewheat mini pitas...wonderful. My daughter and I have been making all sorts of combinations with the chicken, asparagus, fresh spinach, shaved cucumbers, tzatziki, hummus, and pita. She smeared spinach leaves with both tzatziki and hummus, added shaved cucumbers and chicken then rolled the spinach, delicious! We can get used to this.;-)

This is the first time I made and have eaten gazpacho. It always reminds me of the guy that one of my best friends dated many years ago. The guy, a French Canadian, prepared an elaborate dinner for my friend in his well-appointed house (he did all the interior decoration) in Makati. The first course was gazpacho that he made earlier in the day and was chilling in the refrigerator for over 4 hours. When the time came to transfer the gazpacho in a soup tureen, the bowl slipped from his hands and left a pool of tomato/cucumber soup on the flour and soaked his Italian loafers. According to my friend he was upset the whole night over the spilt gazpacho. She later fell asleep on the couch while watching a boring artsy French film. Good thing my friend did not end up with him because he turned out to have plenty of issues and perhaps a questionable sexual orientation.;-)

Anyways, back to dinner. I fell in love with this refreshing cold soup that pairs very well with the asparagus and chicken sandwich. We used to have this sandwich in the house of the friend mentioned above. They were prepared by their cook who used canned asparagus instead of fresh which is also very good although a bit mushy and she sliced them into thin fingers. They were really tasty, light, and different and have become one of our favorite sandwiches.

Gazpacho Andaluz
1½ pounds tomatoes, seeded and chopped
1 medium green bell pepper, seeded and chopped
1 small shallot, chopped
1 clove garlic, chopped
3 slices day-old baguette, crusts removed, soaked in water and squeezed out
1 small cucumber, peeled and chopped
6 tablespoons extra virgin olive oil
2 tablespoons white wine vinegar
1 teaspoon salt
3 cups water

for garnish
garlic croutons, chopped tomatoes, and chopped cucumbers
  • In a food processor combine all the ingredients except garnish and process until smooth. Strain through a fine sieve, pressing down hard to extract all the liquid. Taste and adjust seasoning. Chill in the refrigerator for 2 hours.
  • To serve, pour soup into bowls and pass the garnishes separately.
Chicken Asparagus Sandwich

store-bought or leftover roasted chicken breasts, cut into strips
steamed asparagus, cut into 3 -4 inch pieces
mayonnaise
salt, optional
watercress, torn spinach
whole wheat pitas or sliced bread

Hummus

1 16-ounce can chickpeas (garbanzos)
3 T fresh lemon juice
1 clove garlic, chopped
1½ T tahini
1 tsp salt
extra virgin olive oil
for garnish: chopped flat leaf parsley, paprika, or cayenne, optional
  • Drain chickpeas, reserve ¼ C of liquid. Place all ingredients except olive oil and garnish in a blender, add the reserved liquid and blend on low speed until smooth. Transfer into a bowl. Make a well in the center and pour olive oil in the well. Serve with pita triangles.

Pork And Chicken Adobo

I have been blogging for almost two years now and just realized I have written about adobo only two times, both with Cornish game hens. Considering adobo is our (unofficial) national dish, I should probably feature it more often. I make this dish once a month, a different version (and meat) each time. In the Philippines, the different regions have their own versions, some have onions and chicken livers, others add coconut milk with pieces of green papaya, and some in the Northern provinces don't use soy sauce and the result is a white sauce-less adobo which is really yummy. Another way to prepare adobo is marinating the meat and then browned in oil before stewing in the marinade. I also remember my mother used to cook frog legs adobo with annatto seed oil.

I don't have a recipe that I follow and I don't measure the ingredients. And just like my mother, I taste it after stewing for 15 minutes and adjust the seasonings right then, taste and adjust some more if necessary after the dish is done.

Chicken And Pork Adobo
2 pounds chicken, cut into pieces
1 pound pork shoulder, cut into 2 inch cubes
½ cup cider vinegar (I use the Filipino cane vinegar called sukang Iloko)
½ cup dry sherry
1 tablespoon whole black peppercorn
1 head garlic, peeled and pounded
2 teaspoon sea salt, or to taste
2 tablespoons soy sauce
3 tablespoons extra virgin olive oil
1 bay leaf
½ cup water
pitted Spanish olives, optional
  • Place the meats in a saucepan and add vinegar, sherry, black pepper, salt, garlic, soy sauce, bay leaf, and 2 T olive oil. Let stand for 1 hour.
  • Turn the heat on high and let come to a boil. Turn heat to low and simmer, covered, for 25 minutes or until the sauce is almost dry. Add the water and simmer, covered, for 25 minutes until the meats are tender and sauce has thickened. There should be plenty of sauce but not too soupy.
  • Add the olives, if using, and simmer for 5 minutes more. Remove the bay leaf and discard, drizzle the remaining olive oil and transfer into a serving dish. Serve with steamed rice.
I also love this Portuguese Turkey Adobado which is from my cookbook THE FOOD OF SPAIN AND PORTUGAL by Elisabeth Lambert Ortiz.

Pavo Adobado (marinated Turkey)
one 5 - 9 pound turkey, cut into serving pieces
For the marinade
4 bay leaves
4 cloves garlic, coarsely chopped
1 teaspoon black peppercorns, chopped
1 medium onion, sliced
1 teaspoon salt
3 - 6 cups dry white wine, or enough to cover
  • In a bowl large enough to hold the turkey pieces, combine the turkey with all the marinade ingredients. Refrigerate overnight, turning the pieces once or twice. Lift out and pat dry the turkey pieces with paper towels, set aside. Strain and reserve marinade, discarding the solids.
For the turkey
4 - 6 tablespoons olive oil
2 medium onions, chopped
2 cloves garlic, chopped
2 medium tomatoes, peeled, seeded, and chopped
1-inch piece cinnamon stick

  • Heat oil in a large, heavy skillet and saute turkey until lightly browned. Do this in batches, if necessary, adding oil as needed. Lift out the turkey into a casserole. In the oil remaining in the pan saute the the onion and garlic until the onion is soft. Add the tomatoes and cook until the mixture is thick and well blended. Add to the casserole together with the cinnamon stick and cloves, and salt and pepper to taste. Pour in the reserved marinade, cover and cook in a preheated 350 degree oven for 2 - 3 hours. Serve with rice and a light dry red wine.

Tandoori Style Chicken

Lately I have been into cardamom. I just love it in desserts, tea and sweet baked items. It is also the flavor that defines chicken tandoori. I don't have a traditional tandoor oven, I usually grill the chicken. Today I baked them, I'm not in the mood to start the charcoal grill, although it is warmer today at almost 55°F. I bought some frozen naan at Trader Joe's and when I got home I found out they are made in India! They are sooo good, the real thing, soft, pillowy, crunchy, and chewy. I love it hot smothered with unsalted butter, yumm. Naan is the perfect pair to chicken tandoori. Hmm, maybe I should try to bake this naan recipe but it looks difficult.

Chicken Tandoori
2 pounds boneless chicken meat, white or thigh, butterflied
1½ cups plain yogurt
juice of ½ a large lemon
2 cloves garlic, finely minced
2 teaspoons salt
2 tablespoons ground cardamom
1 tablespoon ground ginger
1 tablespoon annatto powder
1 tablespoon paprika
1 teaspoon ground cumin
1 teaspoon dry mustard powder
1 teaspoon red pepper flakes (more if you want it hotter)
¼ teaspoon ground black pepper
  • Mix all ingredients thoroughly, marinate overnight in the fridge. Pre-heat oven to 400°F. Arrange chicken on a single layer on a large baking pan and bake for 40 minutes or until chicken is slightly browned, turning once after 25 minutes. Serve with buttered hot naan and salad mix or sliced tomatoes and cucumbers.
